  • 3 each Yellow Onions, thinly sliced
  • 3 tablespoons Butter
  • 2 tablespoons Extra Virgin Olive Oil
  • 4 cloves Garlic, minced
  • 0.25 cup White Wine (optional, substitute with broth if desired)
  • 1 teaspoon Fresh Thyme (or 1/2 teaspoon dried thyme)
  • 1 teaspoon Black Pepper
  • 4 cups Beef Broth
  • 12 ounces Pasta (of choice)
  • 0.75 cup Heavy Cream (or half-and-half)
  • 6 ounces Gruyere Cheese, shredded
  • 2 ounces Parmesan Cheese, shredded
  • 0.5 teaspoon Worcestershire Sauce (optional)

Instructions
 

  • In a large skillet or Dutch oven, heat the butter and olive oil over medium-low heat. Add the sliced onions with a pinch of salt. Stir to coat the onions in the butter and oil.
  • Cook the onions slowly for 25-30 minutes, stirring occasionally, until they are deeply golden, caramelized, and soft. If the onions start to burn, add a splash of water or broth and lower the heat. Remember, patience is key for developing that deep, sweet-savory flavor!
  • Add the minced garlic, thyme, and black pepper to the skillet. Cook for about 1 minute until fragrant.
  • If using white wine, pour it in now and scrape up any browned bits from the bottom of the pan. Let it cook until mostly evaporated. If you’re skipping the wine, add the beef broth at this step.
  • Stir in the beef broth and let it simmer for 5 minutes. Then, add the pasta and cook according to package instructions until al dente. Taste the pasta to ensure it’s cooked to your liking.
  • Lower the heat and add the heavy cream, stirring until the sauce is silky. If using Worcestershire sauce, add it now. Taste and adjust seasoning with a pinch of salt or more pepper if needed, keeping in mind that the cheeses will add saltiness.
  • Off the heat, stir in the shredded Gruyère and Parmesan cheese until melted and creamy. Garnish with extra Parmesan if desired and serve immediately.

Notes

For a vegetarian option, replace beef broth with vegetable broth. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
