  • 1 cup corn kernels frozen, canned, or fresh
  • 2 tablespoons tomato paste
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon ground paprika
  • 2 cups instant rice
  • 2 cups low sodium chicken broth
  • salt and pepper to taste

Instructions
 

  • In a large, deep skillet or sauté pan, heat the oil over medium-high heat. Add the smoked sausage, chopped onion, and diced bell pepper. Cook until the sausage starts to brown and the vegetables soften, about 5-7 minutes. Tip: Stir occasionally to ensure even cooking.
  • Reduce the heat to medium. Stir in the corn, tomato paste, garlic powder, and ground paprika. Cook for an additional minute, allowing the flavors to meld. Tip: This step enhances the overall flavor of the dish.
  • Add the instant rice to the skillet, followed by the chicken broth. Stir well and bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to a simmer. Cover the skillet and cook until the rice is tender and the sauce has thickened, about 10-12 minutes. Stir occasionally to prevent sticking. Tip: If you prefer parboiled rice, use 1 cup and increase the broth to 3 cups.
  • Taste and adjust seasoning with salt and pepper as needed. Serve hot, garnished with chopped green onions or fresh herbs if desired.
