Ingredients
  

Main Ingredients

  • 0.5 pound beef pancetta, diced
  • 3 medium shallots, thinly sliced About 1 cup
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 piece pear, peeled, cored, and diced
  • 1 piece lemon, zested and juiced
  • 0.5 cup chopped parsley
  • freshly ground black pepper, to taste
  • No alcoholic drinks allowed, please substitute with a non-alcoholic option.

Instructions
 

  • Prep the pear: Peel, core, and dice the pear and mix with lemon juice. Set aside.
  • Cook the pancetta: In a large skillet over medium heat, cook the beef pancetta until golden brown, about 5-7 minutes. Remove and drain on paper towels.
  • Add the shallots: Cook sliced shallots in the pan until softened, about 1 minute. Stir in Dijon mustard.
  • Add the peas and pears: Stir in the peas and diced pears, cooking for about 5 minutes until heated through.
  • Stir in pancetta and parsley: Turn off heat and mix in half of the pancetta, parsley, and black pepper.
  • Serve: Transfer to a serving bowl, top with remaining pancetta, and garnish with lemon zest.

Notes

For a vegetarian option, replace the pancetta with diced mushrooms for added flavor.
