  • 3/4 cup coconut milk or substitute with water, whole milk, or a milk alternative
  • 3 tablespoons soy sauce
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon granulated garlic
  • 3 tablespoons brown sugar
  • Pinch of cayenne pepper 2-3 dashes for extra heat

Instructions
 

  • Begin by cooking the brown rice according to the package instructions, either on the stovetop or in a rice cooker. This usually takes about 20 minutes, so you can prepare the sauce in the meantime.
  • While the rice is cooking, take a medium-sized pot and combine the peanut butter, coconut milk, soy sauce, ground ginger, granulated garlic, brown sugar, and cayenne pepper. Stir well to combine and heat over medium heat until the mixture is warm and smooth, about 5-7 minutes, stirring continuously.
  • Once the rice is done cooking, fluff it with a fork and then add it into the pot with the peanut sauce. Stir well to combine, ensuring the rice is evenly coated with the sauce.
  • Serve warm, garnished with chopped green onions or crushed peanuts if desired. This dish pairs wonderfully with steamed vegetables or grilled chicken for a complete meal.
