  • 1 cup butter, softened
  • 1 cup creamy peanut butter
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 2 baking powder
  • 1 cup semisweet chocolate chips
  • 1 cup quick-cooking oats
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans or walnuts
  • 1 cup raisins

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, cream together the butter, peanut butter, and both sugars until smooth.
  • Add the eggs, one at a time, beating well after each addition.
  • In a separate bowl, whisk together the flour, baking soda, and baking powder. Gradually add this dry mixture to the creamed mixture, mixing until just combined.
  • Stir in the chocolate chips, oats, coconut, pecans, and raisins until well combined.
  • Drop the cookie dough by tablespoonfuls onto greased baking sheets, spacing them 3 inches apart.
  • Bake in the preheated oven until the cookies turn golden brown, about 12-15 minutes.
  • Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Notes

For a chewier cookie, slightly underbake them by removing them from the oven when the edges are set but the centers are still soft.
