Instructions
Preheat oven to 350°F. Grease mini muffin pan.
Melt butter in a skillet, add pecans, and toast for 10 minutes.
In mixer, cream butter and brown sugar, add flour and salt.
Press dough into muffin cups to create crusts.
Mix remaining sugar, corn syrup, melted butter, and vanilla, then stir in pecans.
Spoon filling into crusts, bake for 15 minutes.
Let cool, add more filling, and cool completely.
Notes
For an extra touch, you can drizzle melted chocolate over the cooled pecan pie bites.
