Ingredients
  

Main Ingredients

  • 2 tablespoons butter For toasting pecans
  • 2.5 cups chopped pecans
  • 1 cup unsalted butter Softened
  • 0.5 cup brown sugar
  • 2 cups all-purpose flour
  • 0.5 teaspoon salt
  • 1.5 cups brown sugar
  • 0.75 cup light corn syrup
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F. Grease mini muffin pan.
  • Melt butter in a skillet, add pecans, and toast for 10 minutes.
  • In mixer, cream butter and brown sugar, add flour and salt.
  • Press dough into muffin cups to create crusts.
  • Mix remaining sugar, corn syrup, melted butter, and vanilla, then stir in pecans.
  • Spoon filling into crusts, bake for 15 minutes.
  • Let cool, add more filling, and cool completely.

Notes

For an extra touch, you can drizzle melted chocolate over the cooled pecan pie bites.
