  • 2 breasts chicken
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 0.5 tsp red pepper flakes optional
  • 0.5 tsp dried oregano
  • 0.5 tsp olive oil
  • 2 Tbsp spinach walnut pesto
  • 0.5 cup spinach walnut pesto
  • 0.75 cup mozzarella cheese
  • 0.25 cup tomatoes sliced
  • 0.5 tsp red pepper flakes optional
  • 0.25 cup grated parmesan optional

Instructions
 

  • If making spinach walnut pesto from scratch, prepare it first. If you have store-bought pesto, you can skip this step. Cut the chicken breasts into small pieces and place them in a bowl.
  • In a small bowl, mix the garlic powder, salt, pepper, red pepper flakes, dried oregano, and olive oil. Pour this seasoning mixture over the chicken and mix well to ensure every piece is coated.
  • Heat 1/2 tsp of oil in a skillet over medium heat. Cook the seasoned chicken for approximately 12-15 minutes, or until fully cooked and no longer pink inside. It's a good idea to stir the chicken occasionally for even cooking.
  • While the chicken is cooking, preheat your oven to 375ºF (190ºC).
  • Once the chicken is cooked, add 2 Tbsp of pesto to the skillet and stir to combine. Let it simmer on low heat for about 2 minutes, then remove from heat and set aside.
  • Place the flatbreads on a baking sheet. Spread a generous layer of spinach walnut pesto on each flatbread, creating a flavorful base.
  • Sprinkle mozzarella cheese evenly over the pesto, followed by adding the sliced tomatoes for a fresh touch.
  • Now, arrange the cooked chicken pieces over the flatbreads, distributing them evenly.
  • Bake in the preheated oven for about 10 minutes, or until the cheese is melted and the crust is slightly browned. Keep an eye on it to prevent over-baking.
  • Optional: Before serving, sprinkle some red pepper flakes and grated parmesan over the top for added flavor.
  • Let the flatbread cool for a minute or two, then slice and enjoy your delicious Pesto Chicken Flatbread!

Notes

For a vegetarian option, substitute chicken with grilled vegetables like zucchini and bell peppers.
