  • 1 pound ground beef
  • 1 tablespoon butter or plant-based butter
  • 0.5 cup red onion thinly sliced
  • 1 medium green bell pepper thinly sliced
  • 1 medium red bell pepper thinly sliced
  • 4 cups cooked rice
  • 2 tablespoons butter for cheese sauce
  • 3 tablespoons all-purpose flour
  • 1.5 cups half-and-half or dairy-free creamer
  • 1 cup white cheddar cheese shredded
  • 0.5 teaspoon ground mustard
  • 1 teaspoon kosher salt
  • 0.125 teaspoon ground black pepper

Instructions
 

  • In a large cast iron skillet, heat over medium-high heat. Add the ground beef, breaking it apart with a spatula. Season with kosher salt and ground black pepper. Cook until fully browned, about 5-7 minutes. Use a slotted spoon to transfer the beef to a bowl, draining excess grease.
  • In the same skillet, add 1 tablespoon of butter and reduce the heat to medium. Add the sliced onion and bell peppers. Sauté for 2-3 minutes, or until they are tender. Remove the veggies from the pan and set aside.
  • In a separate saucepan, melt 2 tablespoons of butter over medium heat. Whisk in 3 tablespoons of all-purpose flour and 1-2 teaspoons of minced garlic to form a roux. Gradually whisk in 1 1/2 cups of half-and-half (or dairy-free creamer) until smooth. Remove from heat and stir in the shredded white cheddar cheese, ground mustard, kosher salt, and ground black pepper until the cheese is melted and the sauce is creamy.
  • Divide the cooked rice, ground beef, and sautéed veggies evenly into individual bowls. Drizzle the cheese sauce generously over each bowl. Dig in and enjoy your tasty Philly Cheesesteak Rice Bowl!
