  • 0.5 cup pineapple juice
  • 0.333 cup unsalted chicken broth
  • 0.25 cup honey or brown sugar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 teaspoons rice vinegar
  • 2 teaspoons cornstarch
  • 1.5 pounds boneless skinless chicken thighs or breasts
  • 1 teaspoon sesame oil
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 cup red bell pepper diced into ¾" pieces
  • 1.5 cups diced pineapple fresh or canned, cut into ¾" pieces
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 0.5 cup sliced green onions white and green parts, divided
  • 0.5 teaspoon sesame seeds

Instructions
 

  • In a medium bowl, whisk together the pineapple juice, chicken broth, honey, hoisin sauce, soy sauce, rice vinegar, and cornstarch until smooth. Set aside.
  • In another medium bowl, combine the diced chicken, sesame oil, salt, and pepper. Mix well to coat the chicken evenly.
  • Heat a large wok, nonstick pan, or stainless steel pan over medium-high heat. Add the vegetable oil. Once hot, carefully add the chicken in a single layer. Sear without moving for about 1 minute, then stir-fry until no longer pink, about 3 to 4 minutes.
  • Add the diced red bell pepper and stir-fry until crisp-tender, about 1 minute. Then, add the pineapple and stir-fry until fragrant, about 30 seconds. Finally, add the minced garlic and ginger, cooking until aromatic, about 30 seconds.
  • Pour in the stir-fry sauce and bring it to a boil. Stir and cook until the sauce thickens, about 1 minute. Turn off the heat and stir in ¼ cup of the green onions.
  • Garnish with the remaining green onions and sesame seeds. Serve with steamed rice or your favorite side dishes, or even in a pineapple boat for a fun presentation!

Notes

For a spicier kick, add some red pepper flakes or sliced jalapeños. You can substitute the chicken with other proteins like shrimp or tofu for variety. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
