  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 10 ounces can diced tomatoes and chiles
  • 0.25 cup milk
  • 0.75 cup sour cream
  • 1.5 cups frozen corn
  • 1.5 cups shredded cheddar cheese
  • 30 ounces bag frozen tater tots

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large skillet over medium-high heat, cook the lean ground beef until almost cooked through, about 5-6 minutes. Be sure to stir occasionally to ensure even cooking.
  • Add the diced onion and minced garlic to the skillet, cooking for an additional 3-4 minutes until the onion is translucent. Drain any excess grease from the skillet.
  • Reduce the heat to medium and stir in the Worcestershire sauce, salt, black pepper, diced tomatoes and chiles, milk, and sour cream. Mix well to combine all the flavors.
  • Add the frozen corn to the skillet and gently fold it into the mixture. Transfer everything to a greased 3-quart baking dish or keep it in the skillet if it’s oven-safe.
  • Sprinkle the shredded cheddar cheese evenly over the mixture, making sure to cover it well.
  • Arrange the frozen tater tots in a single layer on top of the cheese. This will create a deliciously crispy topping.
  • Bake for 30-35 minutes until the tater tots are golden and crispy on top. You can check for doneness by ensuring the tater tots are cooked through and the cheese is bubbling.

Notes

Feel free to add a sprinkle of chopped fresh parsley or green onions for a pop of color and freshness.
