  • 2 tablespoons olive oil
  • 1.5 pounds ground beef (lean)
  • 1 medium yellow onion (diced)
  • 1 medium red bell pepper (diced)
  • 1 medium green bell pepper (diced)
  • 3 small cloves garlic (minced)
  • 1 teaspoon Italian seasoning or Cajun seasoning
  • 2 teaspoons Worcestershire sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 14 ounces canned diced tomatoes
  • 1 cup long grain white rice
  • 1.5 cups beef broth
  • 1.5 cups shredded cheese (cheddar, mozzarella, or a mix)
  • 1 bunch fresh parsley (for garnish)

Instructions
 

  • Preheat your oven to 350°F (180°C).
  • In a large skillet over medium-high heat, warm the olive oil. Add the ground beef and sauté, breaking it apart with a spatula, until it’s no longer pink. Drain any excess fat.
  • Add the diced onion and bell peppers to the skillet. Cook for 2-3 minutes until they start to soften.
  • Stir in the minced garlic, Italian or Cajun seasoning, Worcestershire sauce, salt, and black pepper. Cook for an additional 30 seconds to release the flavors.
  • Add the canned diced tomatoes to the skillet and mix well.
  • Stir in the rice and beef broth. Bring the mixture to a boil, then cover with a lid or aluminum foil if using a casserole dish without a lid.
  • Transfer the skillet or casserole dish to the preheated oven and bake for 20-25 minutes. Check the rice for doneness; it should be tender and not crunchy. If it’s still firm, return it to the oven and add a splash of water if needed.
  • Once cooked, remove from the oven and sprinkle the shredded cheese on top.
  • Return to the oven and place under the broiler for 3-5 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley before serving.

Notes

For added flavor, consider using a mix of different cheeses. You can add other vegetables like corn or zucchini for extra nutrition. This dish can be made ahead of time and reheated for a quick meal. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
