  • 0.5 cup unsalted butter, melted and browned
  • 0.67 cup light brown sugar
  • 2 tbsp white sugar
  • 1 large egg (room temperature)
  • 1 tbsp vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp salt only if using unsalted pistachios
  • 0.5 cup roasted and salted pistachios, finely chopped
  • 1 bar dark chocolate bar, chopped (approx. 3/4 cup)
  • 1 pinch flaky sea salt (for topping)

Instructions
 

  • Brown the Butter: In a medium-sized pan over medium heat, melt the butter. Stir continuously as it crackles and foams. Watch closely as it turns golden brown, which should take about 5 minutes. Once browned and fragrant, remove from heat and transfer to a glass bowl. Let it cool for 30 minutes.
  • Preheat the Oven: While the butter cools, preheat your oven to 350°F (175°C) and line a baking tray with parchment paper. Set aside.
  • Mix the Sugars: In a large bowl, whisk together the cooled butter (it can be slightly warm), brown sugar, and white sugar until well combined.
  • Add Egg and Vanilla: Incorporate the egg and vanilla extract into the sugar mixture, whisking until the mixture is light in color and smooth.
  • Combine Dry Ingredients: Gently fold in the flour, baking soda, and salt (if using) until almost combined. Then, add the chopped dark chocolate and pistachios, folding until no flour streaks remain.
  • Scoop the Dough: Use a cookie scoop to place dough balls onto the lined baking sheet, leaving space between each. If the dough is too soft, chill it in the refrigerator for 15 minutes before scooping.
  • Bake the Cookies: Bake for 12-15 minutes. The cookies are done when the edges are golden brown, but the centers look puffy and slightly underdone.
  • Add Toppings: As soon as the cookies come out of the oven, sprinkle with a dash of flaky sea salt and add extra chopped pistachios and chocolate if desired.
  • Cool and Enjoy: Allow the cookies to cool on a cooling rack before indulging in your delicious creation!

Notes

For a fun twist, try adding different nuts or chocolate varieties. Store cookies in an airtight container to keep them fresh.
