Ingredients
  

  • 3 pounds boneless skinless chicken thighs or boneless skinless chicken breast sliced in half lengthwise
  • 2 teaspoons olive oil
  • 4-5 tablespoons water for pan-frying cooking method, optional

Marinade:

  • 1 can chipotle peppers in adobo sauce 7 oz can
  • 4 tablespoons fresh lime juice
  • 4 tablespoons fresh orange juice
  • 1/2 cup fresh cilantro
  • 6 garlic cloves
  • 1 medium onion quartered
  • 1 teaspoon cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon ground coriander optional
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • In a blender, food processor, or large bowl, combine all marinade ingredients and blend until smooth.
  • Place the chicken thighs in a large airtight container or Ziploc bag. Pour the marinade over the chicken, ensuring it is evenly coated. Marinate in the fridge for up to 24 hours (marinating overnight is best, but at least 15-30 minutes is sufficient).
  • For Grilled Chicken: Preheat the grill to high (about 350°F-400°F) and coat it with olive oil. Grill the chicken for 15-30 minutes, flipping occasionally, until it reaches an internal temperature of 165°F.
  • For Pan-Seared Chicken: Heat a skillet or grill pan over medium-high heat with olive oil. Add the chicken along with the marinade. Cook for 5 minutes, then flip and cook for an additional 3-5 minutes until the chicken reaches 165°F. Drizzle any leftover sauce over the cooked chicken for added flavor and juiciness.
  • For Air Fryer Chicken: Coat the air fryer basket with olive oil. Place the chicken in the basket and air fry at 400°F for 8 minutes. Flip the chicken and cook for another 6-7 minutes or until it reaches an internal temperature of 165°F.
