  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 15 oz tomato sauce
  • 14.5 oz diced tomatoes, drained
  • 8 oz egg noodles
  • 0.5 cup sour cream
  • 0.5 cup cottage cheese
  • 2 cup shredded cheddar cheese

Instructions
 

  • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  • Cook the egg noodles in a pot of salted boiling water according to the package directions. Once cooked, drain and set aside. Tip: Make sure not to overcook the noodles; they should be al dente since they will continue to cook in the oven.
  • In a large skillet over medium heat, brown the ground beef and diced onion together until the beef is fully cooked and the onions are soft. Drain any excess grease from the skillet.
  • Add the minced garlic, salt, black pepper, Italian seasoning, tomato sauce, and drained diced tomatoes to the skillet. Stir well and let the mixture simmer for 5–7 minutes to blend the flavors. Tip: This step allows the spices to infuse into the meat, enhancing the overall flavor.
  • In a medium bowl, mix together the sour cream and cottage cheese. Then, gently fold in the cooked egg noodles until well combined.
  • In the greased baking dish, layer the beef mixture and the creamy noodle mixture. Top with 1 cup of shredded cheddar cheese.
  • Bake uncovered in the preheated oven for 25–30 minutes, or until the cheese is melted and bubbly.
  • Once done, let the casserole cool for about 5 minutes before slicing and serving. Tip: This helps the cheese set a bit, making it easier to serve and enjoy!

Notes

For added flavor, consider mixing in some chopped vegetables like bell peppers or spinach. You can substitute the cheddar cheese with your favorite cheese for a different taste. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
