  • 2 cups long grain rice rinsed
  • 4 cups beef broth
  • 1 tbsp vegetable oil
  • 0.5 lb ground beef
  • 0.5 cup minced beef gizzards
  • 0.5 each green bell pepper minced
  • 0.5 each yellow onion minced
  • 1 tsp garlic powder
  • 0.5 tsp celery seed
  • 1 tsp Creole seasoning
  • 0.25 tsp cayenne pepper
  • 0.25 tsp coarse ground black pepper
  • 0.5 cup water

Instructions
 

  • In a Dutch oven, combine the rinsed rice and beef broth. Bring to a boil, then reduce the heat to medium-low. Cover and cook for 20 minutes. Tip: Avoid lifting the lid while cooking to ensure the rice steams properly.
  • While the rice is cooking, heat vegetable oil in a large cast iron skillet over medium-high heat. Add ground beef, minced beef gizzards, bell pepper, and onion. Cook for 6-8 minutes, breaking the beef apart as it cooks. Tip: Make sure to stir occasionally for even cooking.
  • Stir in garlic powder, celery seed, Creole seasoning, cayenne pepper, black pepper, and water. Mix well. Tip: Taste your mixture at this point; you can adjust the spices according to your preference.
  • Add the cooked rice to the skillet mixture. Stir thoroughly to combine. Tip: Make sure the rice is well mixed with the beef mixture for maximum flavor.

Notes

For added heat, increase the amount of cayenne pepper. You can also customize the dish with your favorite vegetables like diced tomatoes or okra.
