  • 5 count boneless skinless chicken breasts
  • 1 small zucchini thinly sliced
  • 1 small yellow bell pepper thinly sliced
  • 1 small red bell pepper thinly sliced
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 375°F (190°C). Prepare a baking sheet by spraying it with nonstick cooking spray or lining it with parchment paper.
  • Place each chicken breast on a cutting board. Carefully make horizontal slices about 3/4 of the way through the chicken, spacing them about 1/2 inch apart. Be cautious not to cut all the way through.
  • Season the chicken with garlic powder, Italian seasoning, salt, and pepper, making sure to work the seasoning between the slices for maximum flavor.
  • Stuff the sliced chicken with the zucchini and bell peppers, alternating the colors for a vibrant presentation.
  • In a medium bowl, combine the mozzarella and Parmesan cheeses. Sprinkle this cheesy mixture generously over the stuffed chicken.
  • Place the chicken on the prepared baking sheet and bake for 30 to 35 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
  • Once done, let the chicken rest for 5 minutes before serving to allow the juices to redistribute.

Notes

For added flavor, consider marinating the chicken in olive oil and herbs for a few hours before preparing. Feel free to swap in your favorite vegetables or add spinach for extra nutrition.
