  • 0.5 pound raw breakfast sausage
  • 4 large eggs
  • 1 tablespoon butter
  • 1 avocado avocado
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

  • Preheat your oven to the "keep warm" setting (170°F or 75°C).
  • In a 12-inch skillet over medium-high heat, add the raw sausage. Cook for about 5-7 minutes, breaking it into smaller chunks until fully cooked. Once done, transfer the sausage to the oven to keep warm.
  • In a bowl, whisk together the eggs, salt, and pepper. In a separate 10-inch nonstick skillet, melt the butter over medium heat. Pour in the egg mixture. As the edges start to set, gently push the eggs back and forth with a rubber spatula until they are fluffy and fully cooked, about 5 minutes. Remove from heat.
  • Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Cut the avocado into cubes.
  • Divide the warm sausage, fluffy eggs, and avocado cubes between two bowls. Serve immediately and enjoy!

Notes

For added flavor, consider mixing in some cheese or fresh herbs with the eggs. You can also top your breakfast bowl with salsa or hot sauce for a spicy kick.
