  • 1 cup neutral oil
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.5 tsp kosher salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 8 oz cream cheese room temperature
  • 4 tbsp unsalted butter room temperature
  • 0.5 tsp vanilla extract
  • 2 cups powdered sugar sifted

Instructions
 

  • Preheat the oven to 350°F and grease a 10 x 14-inch pan.
  • In a large bowl, beat the eggs, then add pumpkin puree, neutral oil, granulated sugar, brown sugar, and vanilla extract. Whisk until combined.
  • Mix in the flour, salt, baking soda, baking powder, and cinnamon until smooth.
  • Pour the batter into the greased pan and bake for 20-30 minutes, or until a toothpick comes out clean.
  • For the frosting, beat cream cheese and butter until light and fluffy. Add vanilla and powdered sugar to reach desired consistency.
  • Frost the cooled pumpkin bars and sprinkle with cinnamon if desired before serving.

Notes

For a festive touch, sprinkle some ground cinnamon or pumpkin spice on top of the frosting before serving.
