Instructions
In a large bowl, whip the heavy cream until medium stiff peaks form, about 3 minutes.
In another bowl, whisk together pumpkin puree and Greek yogurt until smooth.
Whisk in the pudding mix, pumpkin pie spice, and vanilla extract.
Gently fold in the whipped heavy cream.
Chill for at least 1 hour before serving.
Divide into portions and garnish as desired.
Notes
For a festive touch, consider adding a sprinkle of nutmeg or a drizzle of caramel sauce on top of the mousse.
