  • 1 box super moist vanilla cake mix
  • 2 teaspoons pumpkin pie spice
  • 1 can pumpkin puree
  • 3.75 cup chopped pecans optional
  • 1 tub vanilla frosting optional
  • 1 teaspoon additional pumpkin pie spice for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper.
  • In a medium bowl, whisk together the vanilla cake mix and pumpkin pie spice until well combined.
  • Add the pumpkin puree and mix until smooth.
  • Fold in the chopped pecans if desired.
  • Use a 2-tablespoon cookie scoop to drop dough onto the prepared sheet pan, leaving about an inch of space between each cookie.
  • Bake in the preheated oven for 11-13 minutes or until a toothpick inserted comes out clean.
  • Allow the cookies to cool completely on the baking sheet.
  • If desired, frost the cooled cookies with vanilla frosting and sprinkle with additional pumpkin pie spice for garnish.

Notes

For a festive touch, consider adding a dollop of whipped cream or a sprinkle of cinnamon on top of the frosted cookies.
