Instructions
Preheat your oven to 350°F (175°C) and line a sheet pan with parchment paper.
In a medium bowl, whisk together the vanilla cake mix and pumpkin pie spice until well combined.
Add the pumpkin puree and mix until smooth.
Fold in the chopped pecans if desired.
Use a 2-tablespoon cookie scoop to drop dough onto the prepared sheet pan, leaving about an inch of space between each cookie.
Bake in the preheated oven for 11-13 minutes or until a toothpick inserted comes out clean.
Allow the cookies to cool completely on the baking sheet.
If desired, frost the cooled cookies with vanilla frosting and sprinkle with additional pumpkin pie spice for garnish.
Notes
For a festive touch, consider adding a dollop of whipped cream or a sprinkle of cinnamon on top of the frosted cookies.
