  • 4 pieces uncooked beef bacon
  • 4 large eggs
  • 1 tablespoon butter or olive oil
  • 1 cup grated cheese
  • 4 large flour tortillas
  • 1 cup roasted potatoes
  • 1 cup chipotle salsa
  • 1 large avocado sliced
  • 1 cup sour cream for serving
  • 4 tablespoons chopped cilantro optional

Instructions
 

  • In a large cast iron skillet, cook the beef bacon over medium heat until crispy. This usually takes about 5-7 minutes. Once done, remove it from the skillet and set aside.
  • In a bowl, crack the eggs and whisk them together until well beaten. In the same skillet, add the butter or olive oil and heat over medium-high heat. Pour in the eggs and scramble them gently, seasoning with salt and pepper to taste.
  • Once the eggs are nearly done, sprinkle the grated cheese on top and allow it to melt, which should take about 1 minute.
  • To assemble your burritos, lay the 4 tortillas flat on a clean surface. Divide the scrambled eggs evenly among the tortillas, then layer on the chopped bacon, roasted potatoes, chipotle salsa, sliced avocado, and chopped cilantro if using.
  • Carefully fold in the sides of each tortilla and roll them up tightly to form burritos.
  • If desired, griddle the burritos on a flat top or skillet for a couple of minutes on each side until they are golden brown and heated through.
  • Serve immediately with a dollop of sour cream on the side for added creaminess.

Notes

Feel free to customize your burrito with additional toppings like diced tomatoes or jalapeños for extra flavor. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
