3.75ozheavy cream
4ozParmesan cheese, grated

Instructions
Melt 2 tablespoons of butter in a large non-stick skillet over medium heat. Add the tilapia fillets and season with salt and pepper. Cook for 3-4 minutes on each side until fully cooked. Remove from skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of butter. Sauté the diced onion for about 5 minutes until translucent.
Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for an additional 5 minutes, allowing flavors to meld.
Pour in heavy cream and add grated Parmesan cheese. Stir well and taste the sauce, adjusting salt if needed.
Return cooked tilapia fillets to the skillet, covering them with the creamy sauce. Let it simmer for a minute to warm through.
Garnish with chopped parsley and additional grated Parmesan cheese before serving.
Notes
To roast peppers, place them under the broiler until the skin is charred, then peel and chop.
