Ingredients
  

Main Ingredients

  • 1 lb tilapia fillets
  • 3 tbsp butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 oz roasted peppers, chopped (see note)
  • 6 oz roasted peppers, pureed (see note)
  • 3.75 oz heavy cream
  • 4 oz Parmesan cheese, grated
  • to taste salt and pepper
  • to garnish chopped parsley

Instructions
 

  • Melt 2 tablespoons of butter in a large non-stick skillet over medium heat. Add the tilapia fillets and season with salt and pepper. Cook for 3-4 minutes on each side until fully cooked. Remove from skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of butter. Sauté the diced onion for about 5 minutes until translucent.
  • Add minced garlic, chopped roasted peppers, and pureed roasted peppers to the skillet. Cook for an additional 5 minutes, allowing flavors to meld.
  • Pour in heavy cream and add grated Parmesan cheese. Stir well and taste the sauce, adjusting salt if needed.
  • Return cooked tilapia fillets to the skillet, covering them with the creamy sauce. Let it simmer for a minute to warm through.
  • Garnish with chopped parsley and additional grated Parmesan cheese before serving.

Notes

To roast peppers, place them under the broiler until the skin is charred, then peel and chop.
