  • 1 box red velvet cake mix plus ingredients listed on the cake mix packaging
  • 16 ounces cream cheese room temperature
  • 4 tablespoons butter room temperature
  • 0.5 cup powdered sugar
  • 2 cups graham crackers crushed
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line or grease 2 8-inch cake pans.
  • Prepare the red velvet cake according to the instructions on the packaging. Bake as directed and allow it to cool completely.
  • Once the cake has cooled, crumble it with your hands until it resembles coarse sand. If too moist, dry in the oven at 350°F (175°C) for 5-6 minutes.
  • In a large mixing bowl, combine the cream cheese, butter, and powdered sugar. Use an electric mixer to cream until fluffy, about 2-3 minutes.
  • Crush graham crackers in a ziplock bag using a rolling pin. Add to the cream cheese mixture with vanilla extract and mix thoroughly.
  • Use a 2-teaspoon cookie scoop to form balls, rolling them until round. Place on a lined baking sheet or plate and refrigerate for 1 hour.
  • Roll chilled balls in red velvet cake crumbs, ensuring all sides are coated. Shape into round balls if needed.
  • Enjoy immediately or refrigerate until ready to serve. They can last in the fridge for several days.

For a decorative touch, consider rolling the finished cake bites in additional red velvet cake crumbs or sprinkles before serving.
