Instructions
Preheat the oven to 350°F (175°C) and line or grease 2 8-inch cake pans.
Prepare the red velvet cake according to the instructions on the packaging. Bake as directed and allow it to cool completely.
Once the cake has cooled, crumble it with your hands until it resembles coarse sand. If too moist, dry in the oven at 350°F (175°C) for 5-6 minutes.
In a large mixing bowl, combine the cream cheese, butter, and powdered sugar. Use an electric mixer to cream until fluffy, about 2-3 minutes.
Crush graham crackers in a ziplock bag using a rolling pin. Add to the cream cheese mixture with vanilla extract and mix thoroughly.
Use a 2-teaspoon cookie scoop to form balls, rolling them until round. Place on a lined baking sheet or plate and refrigerate for 1 hour.
Roll chilled balls in red velvet cake crumbs, ensuring all sides are coated. Shape into round balls if needed.
Enjoy immediately or refrigerate until ready to serve. They can last in the fridge for several days.

For a decorative touch, consider rolling the finished cake bites in additional red velvet cake crumbs or sprinkles before serving.
