  • 0.75 pound corned beef, cut into ½-inch cubes
  • 3 tablespoons olive oil
  • 1 small sweet onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds
  • 20 ounces coleslaw mix
  • 1 cup sauerkraut, drained
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 ounces Swiss cheese, sliced
  • green onions, for serving green parts only, thinly sliced

Instructions
 

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add cubed corned beef and cook for 4-5 minutes, stirring occasionally, until lightly browned.
  • Transfer the beef to a paper towel-lined plate to drain.
  • In the same skillet, add another tablespoon of olive oil and diced onion. Cook for 2-3 minutes until translucent.
  • Stir in minced garlic and caraway seeds, cooking for an additional minute.
  • Add the remaining tablespoon of olive oil and coleslaw mix. Cook for 6-8 minutes, until the coleslaw is tender but still crisp.
  • Mix in drained sauerkraut, cooked corned beef, salt, and black pepper. Top with sliced Swiss cheese and reduce heat to low. Cook for 3-4 minutes until cheese is melted.
  • Prepare Thousand Island dressing by combining mayonnaise, sour cream, ketchup, dill relish, minced onion, Worcestershire sauce, minced garlic, and paprika.
  • Serve warm Reuben filling in bowls, drizzled with Thousand Island dressing and topped with sliced green onions.

Notes

For a spicier kick, consider adding a dash of hot sauce to the dressing. You can substitute the Swiss cheese with your favorite cheese if desired. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
