  • 2 cups leftover corned beef, diced
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 8 count flour tortillas
  • 1 2 Russian dressing
  • count optional toppings (pickles, jalapeños, green onions, tomatoes, hot sauce)

Instructions
 

  • In a medium bowl, combine the diced corned beef, drained sauerkraut, and shredded Swiss cheese. Mix well to combine all the flavors.
  • Warm the flour tortillas in a skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable.
  • Spoon a generous amount of the corned beef mixture onto each tortilla, folding it in half to create a taco shape.
  • Heat a non-stick skillet over medium heat. Place the filled tacos in the skillet and cook for about 2-3 minutes on each side, or until the tortillas are golden and crispy.
  • Serve the tacos warm with Russian dressing on the side for dipping. Add any optional toppings you desire for extra flavor.

Notes

Make sure to drain the sauerkraut well to prevent soggy tacos. Rinsing it under cold water can help if you prefer a milder taste. If you have leftovers, store the components separately in airtight containers in the refrigerator. Reheat before serving.
