Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
Toss the thinly sliced bell pepper and red onion in cooking spray and spread them on the prepared baking sheet. Bake in the preheated oven until softened to your liking, approximately 15 minutes.
Lay the roast beef slices in a single layer on another baking sheet and evenly sprinkle the shredded cheddar cheese over the top.
Bake in the oven until the cheese just melts, about 5 minutes.
Allow the meat and cheese to cool for about 5 minutes until you can handle them. Place the veggies on one end of each roast beef slice and roll them up over the veggies.
Slice the roll-ups in half or enjoy them whole. You can also secure them with a toothpick in the center for easier handling. Enjoy!
