Ingredients
  

Main Ingredients

  • 0.5 pound Brussels sprouts, trimmed and halved
  • 0.5 tablespoon Avocado oil
  • 0.33 cup Blue cheese crumbles
  • 2 slices Beef bacon, cut into 1-inch pieces
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Toss the halved Brussels sprouts with avocado oil, salt, and pepper. Arrange them cut side down on the baking sheet and roast for 12-15 minutes.
  • Prepare the blue cheese and bacon while the Brussels sprouts are roasting.
  • Remove the Brussels sprouts from the oven and turn them over so the cut side is facing up.
  • Sprinkle about 1/2-1 teaspoon of blue cheese crumbles on top of each Brussels sprout.
  • Place a piece of beef bacon on the blue cheese on each Brussels sprout and secure with a toothpick.
  • Sprinkle a bit of pepper on top.
  • Put the Brussels sprouts back in the oven and bake for another 10-15 minutes, or until the bacon is crispy.
  • Let the stuffed Brussels sprouts cool for a couple of minutes before serving.

Notes

For a vegetarian option, omit the bacon and add some chopped nuts for crunch.
