Ingredients

  • 1 head cauliflower broken into small pieces
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 1 tsp garlic powder
  • 4 oz Ranch or Blue Cheese Salad dressing
  • 3 oz cheese of choice cheddar, brie, gouda, mozzarella, etc.
  • 4 oz cream cheese
  • 1 tbsp hot sauce
  • 0.25 cup shredded mozzarella or cheddar cheese

Instructions
 

  • Preheat the oven to 450°F (232°C). Grease a cast-iron skillet or an 8x8 baking pan with cooking spray.
  • In a bowl, toss the cauliflower pieces with olive oil, garlic powder, and salt until well-coated. Spread the cauliflower evenly in the skillet or baking pan. Bake for 10 minutes, stirring halfway through. For softer cauliflower, bake for an additional 2-5 minutes.
  • While the cauliflower is roasting, mix the salad dressing, cheese, and cream cheese in a small bowl. Microwave for 30 seconds until the cheese begins to melt. Stir in hot sauce and garlic powder.
  • Once the cauliflower is roasted, take it out of the oven and pour the spicy cheese sauce over it. Gently stir to coat the cauliflower.
  • Sprinkle additional shredded cheese over the top and return to the oven. Bake for an extra 10 minutes for crunchy cauliflower or 15 minutes for softer cauliflower.

Notes

For a milder version, adjust the amount of hot sauce to suit your taste. Feel free to customize the cheese selection to your preference. Top with sliced green onions or bacon bits for added flavor.
