  • 3 tablespoons Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 head cauliflower, separated into florets (about 4 cups)
  • Salt and pepper, to taste
  • Fresh dill, chopped, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the Dijon mustard, olive oil, minced garlic, and a pinch of salt and pepper. Mix well.
  • Add the cauliflower florets to the bowl and toss them with your hands until they are thoroughly coated in the mustard mixture.
  • Spread the coated cauliflower in a single layer on a baking sheet lined with parchment paper.
  • Roast in the oven for 30 minutes, or until the cauliflower is tender and lightly browned.
  • Once done, remove the baking sheet from the oven and transfer the roasted cauliflower to a shallow serving bowl or plate. Garnish with chopped fresh dill before serving.

Notes

For added flavor, consider sprinkling some grated Parmesan cheese over the cauliflower before roasting. You can also experiment with different herbs like parsley or thyme for a unique twist.
