Ingredients

  • 4 slices beef bacon
  • 2 cups red onion, chopped
  • 4 cloves garlic, minced
  • 2 cans pinto beans, rinsed and drained
  • 2 cans white beans, rinsed and drained
  • 2 cups root beer
  • 1 4 apple cider vinegar
  • 1 4 dark molasses
  • 2 tbsp tomato paste
  • 2 tbsp Dijon mustard
  • 2 tsp chili seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 string No alcoholic drinks allowed, please substitute with a non-alcoholic option.

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Cut the beef bacon into 1-inch pieces. Chop the onion and mince the garlic. Tip: Use a sharp knife for easier cutting.
  • In a large ovenproof casserole pot, cook the bacon over medium heat until crispy. Remove the bacon and set it aside on paper towels, keeping the bacon fat in the pot.
  • Add the onions to the pot and cook until golden brown, around 5-6 minutes. Stir in the garlic for a minute. Tip: Scrape up any bits stuck to the bottom for extra flavor.
  • Add the drained beans, root beer, apple cider vinegar, molasses, tomato paste, Dijon mustard, chili seasoning, salt, and pepper. Mix well until combined.
  • Bring the mixture to a boil. Then, transfer the pot to the preheated oven and bake uncovered for 30 minutes until the liquid thickens and the beans are glazed. Tip: Keep an eye on them to prevent burning.
  • Add the cooked bacon, stir, and serve. Tip: Garnish with fresh parsley for a pop of color!

Notes

You can adjust the sweetness by adding more or less molasses according to your taste preference.
