  • 2 cups cherry tomatoes, diced
  • 1 medium white onion, chopped
  • 1 large jalapeño, chopped
  • 1 bunch cilantro, chopped
  • 0.5 lime juiced
  • 0.5 tsp salt
  • 2 lbs boneless, skinless chicken breast, diced
  • 0.5 tsp cumin
  • 1 tsp paprika powder
  • 1 tbsp garlic powder
  • 0.25 tsp red chili pepper flakes
  • 0.25 tsp black pepper
  • 1 cup shredded mozzarella

Instructions
 

  • Preheat your oven to 400°F (200°C). Prepare a 9x13-inch casserole dish by spraying it with oil.
  • In a mixing bowl, combine the diced cherry tomatoes, chopped onion, jalapeño, cilantro, lime juice, and 1/4 tsp of salt. Stir well to mix all the ingredients.
  • Place the diced chicken in the prepared casserole dish. Sprinkle the cumin, paprika, garlic powder, red chili pepper flakes, and black pepper over the chicken. Make sure each piece is well coated with the seasonings.
  • Pour the tomato mixture over the seasoned chicken, spreading it evenly. Top with the shredded mozzarella cheese.
  • Bake in the preheated oven, uncovered, for 25-30 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.
  • Once done, garnish with extra cilantro before serving.

Notes

For a milder dish, you can reduce the amount of jalapeño or omit the red chili pepper flakes. Serve with rice or a side salad for a complete meal.
