  • 1 tablespoon olive oil
  • 14 ounces smoked sausage, sliced
  • 2 tablespoons butter
  • 1 unit onion, thinly sliced
  • 3 cloves garlic, minced
  • Salt, to taste
  • 0.75 teaspoon freshly cracked black pepper
  • 1.5 pounds medium-sized red skin potatoes, peeled and sliced into ½" thick circles
  • 1.5 cups chicken stock
  • 0.33 cup parsley, chopped

Instructions
 

  • In a large deep skillet, heat the olive oil over medium heat. Once hot, add the sliced smoked sausage. Cook for about 5 minutes, or until the sausage is deep brown. Remove the sausage from the pan and set aside. Tip: Make sure not to overcrowd the pan for even browning.
  • In the same skillet, add the butter and let it melt. Add the sliced onion and caramelize for about 5-7 minutes, stirring occasionally. Then, add the minced garlic, a pinch of salt, black pepper, and smoked paprika. Stir and sauté for an additional 2 minutes. Tip: Keep an eye on the garlic to prevent burning.
  • Add the sliced potatoes, chicken stock, and chopped parsley to the skillet. Stir to combine. Cover the pan with a lid and let it simmer on medium-low heat for about 15 minutes. Tip: Stir occasionally to ensure even cooking.
  • After 15 minutes, uncover the pan and let it simmer for another 10 minutes, or until the potatoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.
  • Return the browned sausage to the pan, adding a couple more pinches of salt and pepper if needed. Stir well and serve hot. Tip: Garnish with extra parsley for a fresh touch!

Notes

For added flavor, consider using different types of sausage or adding your favorite vegetables. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
