Ingredients

  • 3 cup water
  • 3 cup quick cooking grits
  • 1 cup butter
  • 0.5 pound ground sausage cooked and drained
  • 1 cup shredded cheddar cheese divided
  • 1 teaspoon salt divided
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon thyme
  • 0.25 teaspoon pepper
  • 4 large eggs
  • 0.25 cup milk
  • 1 cup shredded cheese for topping
  • 0.25 cup butter cut into pats for topping

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a 1-1/2 quart casserole dish. Set it aside.
  • In a skillet, cook the ground sausage until browned. Drain any excess grease and set the cooked sausage aside.
  • In a large saucepan, bring 3 cups of water to a rapid boil over high heat. Stir in the grits and 1/2 teaspoon of salt.
  • Reduce the heat to a simmer, cover the saucepan, and stir the grits frequently. Cook for 5-7 minutes, then remove from heat.
  • Stir in the butter until melted, then add 3/4 cup of shredded cheddar cheese and mix well. Incorporate the cooked sausage, remaining salt, garlic powder, thyme, and pepper into the grits mixture. Set aside.
  • In a separate bowl, crack the eggs and add the milk. Whisk until well combined.
  • Pour the egg mixture into a preheated skillet and scramble the eggs just until they are half cooked. Stir the half-cooked eggs into the grits mixture and combine thoroughly.
  • Pour the grits, egg, and sausage mixture into the prepared casserole dish. Dot the top with the remaining pats of butter.
  • Bake in the preheated oven for 25-30 minutes, or until the top is lightly browned.
  • Remove the casserole from the oven and sprinkle the top with the remaining shredded cheese. Return to the oven for an additional 3-5 minutes, or until the cheese is melted.
  • Let the casserole stand for 5 minutes before serving.

Notes

For a spicier kick, consider adding some diced jalapeños or hot sauce to the grits mixture. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
