  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 1 cup diced yellow onion
  • 2 cups marinara sauce
  • 1/3 cup sweet Thai chili sauce
  • 2 lbs mild Italian sausage
  • 40 Ritz crackers
  • 3 eggs

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large sauté pan over medium-high heat, melt a dab of butter or margarine.
  • Add the diced green peppers, red peppers, and onions to the pan. Sauté until the onions are translucent and slightly browned, about 5-7 minutes.
  • Pour in 1 cup of marinara sauce and stir well. Reduce the heat to low and let it simmer while you prepare the meat mixture.
  • Remove the sausage meat from the casings and place it in a large mixing bowl.
  • Crush the Ritz crackers in a Ziploc bag using a rolling pin or heavy pot. Add the cracker crumbs to the bowl with the sausage meat.
  • Crack the eggs into the bowl with the sausage and cracker crumbs. Mix everything together using your hands until well combined.
  • Add 1 cup of the marinara and peppers mixture to the sausage mixture. Combine well, ensuring the flavors meld together.
  • Line a loaf pan with aluminum foil and spray it with cooking spray to prevent sticking.
  • Press the sausage mixture into the loaf pan evenly. Pour the remaining marinara and peppers mixture on top.
  • Bake the meatloaf in the oven until a meat thermometer inserted into the center reads 160°F (71°C), about 1 hour 10 minutes to 1 hour 20 minutes.
  • Let the meatloaf rest in the pan for 5 minutes after removing it from the oven. This allows the juices to redistribute.
  • Use the foil to lift the meatloaf out of the pan, slice, and serve. Enjoy your delicious sausage meatloaf!

Notes

For a spicier kick, consider adding some crushed red pepper flakes to the sausage mixture.
