  • 1 teaspoon olive oil
  • 1 pound Italian sausage links, cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 2 large potatoes, peeled and thickly sliced
  • 2 large green bell peppers, seeded and cut into wedges
  • 2 large red bell peppers, seeded and cut into wedges
  • 3 large onions, cut into wedges
  • 0.25 cup white wine No alcoholic drinks allowed, please substitute with a non-alcoholic option.
  • 0.25 cup chicken stock
  • 0.5 teaspoon Italian seasoning
  • 1 to taste Salt and freshly ground black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • In a large skillet over medium heat, add 1 teaspoon of olive oil. Cook the sausage until browned, about 5-10 minutes. Transfer to a large baking dish.
  • Pour 2 tablespoons of olive oil into the skillet. Add the potatoes and cook, stirring occasionally, until browned, around 10 minutes.
  • Place the cooked potatoes into the baking dish, leaving some oil in the skillet.
  • In the same skillet, cook and stir the green and red peppers and onions until they begin to soften, about 5 minutes.
  • Add the cooked vegetables to the baking dish. Pour the wine and chicken stock over the sausage and vegetables. Sprinkle with Italian seasoning, salt, and pepper.
  • Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven for 20-25 minutes until hot and bubbling. Serve hot.

Notes

For added flavor, consider sprinkling some grated Parmesan cheese on top before baking.
