Instructions
Preheat the oven to 400°F (200°C).
In a large skillet over medium heat, add 1 teaspoon of olive oil. Cook the sausage until browned, about 5-10 minutes. Transfer to a large baking dish.
Pour 2 tablespoons of olive oil into the skillet. Add the potatoes and cook, stirring occasionally, until browned, around 10 minutes.
Place the cooked potatoes into the baking dish, leaving some oil in the skillet.
In the same skillet, cook and stir the green and red peppers and onions until they begin to soften, about 5 minutes.
Add the cooked vegetables to the baking dish. Pour the wine and chicken stock over the sausage and vegetables. Sprinkle with Italian seasoning, salt, and pepper.
Gently stir the sausage, potatoes, and vegetables together.
Bake in the preheated oven for 20-25 minutes until hot and bubbling. Serve hot.
Notes
For added flavor, consider sprinkling some grated Parmesan cheese on top before baking.
