Ingredients

  • 1 pound sweet Italian sausage links or meatballs
  • 2 tablespoons olive oil
  • 2 cups grape tomatoes, halved
  • 12 count fresh banana peppers, cleaned of seeds and ribs and chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried basil
  • 2 cloves garlic, crushed
  • 0.5 pound pasta
  • count grated cheese (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C) and grease a baking dish with non-stick cooking spray.
  • If using sausage links, remove the casings and chop the sausage into bite-sized pieces. You can also roll them into small meatballs for a fun twist.
  • Slice the banana peppers and tomatoes, placing them in a large mixing bowl. This is a great time to get the kids involved!
  • Add the sausage, spices, and olive oil to the bowl, tossing everything well to combine. Alternatively, you can mix everything directly in the prepared baking dish for fewer dishes to clean.
  • Spread the mixture evenly in the baking dish and bake for 30 minutes or until the sausage is cooked through and the peppers are tender. The smell will be incredible!
  • While the dish bakes, cook the pasta according to package instructions. Make sure to reserve some pasta water in case you need to loosen the dish later.
  • Once the peppers are roasted, combine them with the cooked pasta in a large bowl and serve with grated cheese if desired. The cheese adds a lovely creamy texture.
  • This dish pairs well with rice or zucchini noodles for a gluten-free or Paleo alternative. The roasted banana peppers can also be enjoyed on their own as a tasty side.
