  • 2.5 tablespoons olive or avocado oil
  • 4 whole fully cooked beef sausages sliced into 1/4-inch circles
  • 2 medium zucchinis cubed
  • 1 whole onion cut into 3/4-inch pieces
  • 1 whole bell pepper cut into 3/4-inch pieces
  • 0.5 teaspoon salt
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon black pepper
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh basil for garnish (optional)

Instructions
 

  • Heat 1 tablespoon of oil in a large skillet over medium-high heat. Once hot, add the sliced sausages. Sauté and flip frequently for 1 to 2 minutes until they have some browning. Remove the sausages from the pan and set them aside.
  • Reduce the heat to medium. Add the remaining 1 1/2 tablespoons of oil to the skillet with zucchini, onion, and bell pepper. Sprinkle with salt, oregano, basil, garlic powder, onion powder, and black pepper. Stir well. Let it cook until the onion is translucent and the peppers and zucchinis are nearly tender, about 5 to 10 minutes.
  • Return the sausages to the skillet along with minced garlic. Stir to combine. Cover and let everything heat through for 1 to 2 minutes. Taste and add extra salt if needed. Garnish with chopped fresh basil if desired.

Notes

For added flavor, you can experiment with different types of sausages like chicken or beef sausages. Feel free to customize the seasoning to suit your taste preferences.
