  • 1 pound ground Italian sausage
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 4 teaspoons garlic, minced
  • 1 medium zucchini, diced
  • 15 ounces petite diced tomatoes, with juices
  • 2 tablespoons tomato paste
  • 15 ounces cannellini beans, drained, rinsed
  • 6 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 0.5 teaspoon kosher salt
  • 1.5 cups ditalini pasta, uncooked
  • 2 cups fresh baby spinach, roughly chopped

Instructions
 

  • In a large pot or Dutch oven over medium heat, cook the Italian sausage until browned, breaking it apart as it cooks for about 6-8 minutes. If needed, drain excess grease and set the sausage aside on a plate.
  • In the same pot, add olive oil, onion, carrots, and celery. Cook until softened, approximately 5 minutes.
  • Stir in garlic and zucchini, cooking for an additional 2 minutes.
  • Return the cooked sausage to the pot. Add diced tomatoes, tomato paste, cannellini beans, chicken broth, Italian seasoning, and salt. Bring to a boil, then reduce heat to a simmer and cook for 15 minutes.
  • Add the ditalini pasta and cook until al dente, around 8-10 minutes or as per package instructions. Stir occasionally to prevent sticking.
  • Mix in the chopped spinach and cook for 1-2 minutes until wilted.
  • Serve warm.
