  • 1 pound sweet Italian sausage casings removed and chopped
  • 2 tablespoons olive oil
  • 2 cups grape tomatoes halved
  • 12 count fresh banana peppers cleaned, seeded, and chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried basil
  • 2 cloves garlic crushed
  • 0.5 pound pasta
  • 1 cup grated cheese optional

Instructions
 

  • Preheat your oven to 400°F (200°C) and spray a baking dish with non-stick cooking spray.
  • In a large mixing bowl, combine the chopped sausage, halved grape tomatoes, and chopped banana peppers.
  • Add the olive oil, salt, black pepper, oregano, basil, and crushed garlic to the bowl. Toss everything together until well mixed.
  • Spread the mixture evenly in the prepared baking dish.
  • Bake in the preheated oven for 30 minutes, or until the sausage is fully cooked and the peppers are soft.
  • While the sausage and peppers are baking, cook your pasta according to package instructions.
  • Once the sausage and peppers are done, combine them with the cooked pasta and serve hot. Top with grated cheese if desired.

Notes

This dish is also delicious served over rice or zucchini noodles for a gluten-free or Paleo option. Roasted banana peppers can be enjoyed on their own as a tasty side.
