  • 0.5 pound ground beef
  • 1 cup diced yellow onion
  • 1 cup diced green bell pepper
  • 1 cup diced celery
  • 1 teaspoon minced garlic
  • 1 tablespoon creole seasoning
  • 1.5 cups long-grain rice
  • 3 cups beef broth
  • 1 sprig thyme
  • chopped parsley for garnish

Instructions
 

  • In a large skillet, brown the ground beef over medium-high heat for about 4-5 minutes, breaking it apart as it cooks until fully browned. Make sure to drain any excess fat for a healthier option.
  • Add the minced garlic, diced onion, diced green bell pepper, and diced celery to the skillet. Sauté for another 4-5 minutes until the vegetables are softened. Stir occasionally to prevent sticking.
  • Season the mixture with salt, pepper, and creole seasoning. Stir in the long-grain rice and beef broth. Place the thyme sprigs on top, which will infuse the dish with a lovely herbal note.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 20 minutes, or until the rice is tender and has absorbed the liquid. Avoid lifting the lid too often, as it releases steam that’s needed for cooking.
  • Remove the thyme sprigs, fluff the rice with a fork, and garnish with chopped parsley before serving. This adds a fresh touch and a splash of color!

Notes

Feel free to adjust the seasoning to your taste, especially with the salt and creole seasoning. Customize the vegetables based on your preference or what you have on hand. This dish pairs wonderfully with a side salad or some crusty bread for a complete meal.
