  • 4 pieces chicken thighs
  • 3 tablespoons olive oil
  • 2 large onions thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons Dijon mustard
  • 1 cup chicken broth
  • 1 4 cup lemon juice
  • 1 teaspoon smoked paprika
  • 1 2 teaspoon cayenne pepper
  • 1 teaspoon bouillon powder
  • 1 2 teaspoon salt

Instructions
 

  • Wash and pat dry the chicken thighs. Slice the onions and mince the garlic.
  • Place the chicken in a large bowl and add the minced garlic, sliced onions, lemon juice, Dijon mustard, smoked paprika, cayenne pepper, bouillon powder, and salt. Mix well and marinate in the fridge for 2 hours or overnight.
  • Remove the chicken from the marinade, scraping off excess marinade and onions, but keep them aside.
  • In a skillet or large Dutch oven, heat olive oil over medium-high heat. Brown the chicken thighs for 4-5 minutes on each side.
  • Once browned, remove the chicken from the skillet. Add the sliced onions and the reserved marinade to the skillet. Cook on low to medium-low heat for about 5 minutes until the onions caramelize.
  • Return the browned chicken to the skillet with the caramelized onions. Pour in the chicken broth and cook for 15-20 minutes until the chicken is fully cooked.
  • Taste the dish and adjust salt if necessary before serving.

Notes

For added flavor, consider garnishing with fresh herbs like parsley or thyme before serving.
