Ingredients
  

Peanut Sauce:

  • 1/2 cup creamy peanut butter
  • 1/3 cup tamari or soy sauce
  • 2-3 tablespoons Thai red curry paste
  • 1 tablespoon chopped pickled ginger
  • 1 tablespoon toasted sesame oil

Steak:

  • 1/3 cup sweet Thai chili sauce
  • 1/3 cup tamari or soy sauce
  • 6 cloves garlic chopped
  • 1 tablespoon fresh grated ginger
  • 2 tablespoons chili paste Thai curry or Gochujang
  • 2 pounds flank steak cubed
  • Rice or coconut rice for serving
  • Limes avocado, sesame seeds, and cilantro, for serving

Instructions
 

  • Make the peanut sauce by blending all sauce ingredients in a glass jar or blender. Add water as needed to reach desired consistency.
  • In a bowl, combine sweet Thai chili sauce, tamari/soy sauce, garlic, ginger, and chili paste. Add cubed beef and toss to coat. For enhanced flavor, let it marinate for 10 minutes if time allows.
  • Thread the marinated beef onto skewers.
  • Preheat your grill, grill pan, or skillet over medium-high heat. Grill the skewers for 8-12 minutes, turning occasionally, until lightly charred and cooked to your preference.
  • Serve the steak skewers over rice, accompanied by limes, avocado, sesame seeds, cilantro, and a side of peanut sauce for dipping. Enjoy!
