  • 1.5 lbs chicken breast or boneless skinless chicken thighs, cut into cubes
  • 1 each red bell pepper, diced
  • 1 each orange bell pepper, diced
  • 0.5 each red onion, cut into chunks
  • 1 cup pineapple chunks
  • 0.5 cup Primal Kitchen Foods Hawaiian BBQ Sauce
  • 1 tbsp avocado oil
  • 0.25 tsp salt
  • 1 each lime, juiced
  • 1 each cilantro, for garnish
  • 1 each white sesame seeds, for garnish

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and spray it with avocado oil for easy cleanup.
  • In a mixing bowl, season the chicken breast with salt and pepper. Add 1 tablespoon of avocado oil to help the spices stick and enhance flavor.
  • Add the diced red and orange bell peppers, red onion, and Hawaiian BBQ sauce to the chicken. Use your hands to coat everything thoroughly for maximum flavor.
  • Spread the chicken mixture evenly on the prepared baking sheet. Bake in the preheated oven for 20 minutes.
  • After 20 minutes, add the pineapple chunks to the baking sheet. Return to the oven and bake for an additional 10-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  • Once cooked, remove the sheet pan from the oven. Squeeze fresh lime juice over the mixture to brighten the flavors and garnish with cilantro and sesame seeds for a beautiful presentation.
  • Serve the BBQ chicken with cauliflower rice for a lower carb option, or pair it with white rice for a gluten-free meal. Enjoy!

Notes

For a smoky flavor, consider grilling the skewers instead of baking them. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
