  • 1 pound frozen pierogies potato and cheese or preferred type
  • 4 links sausage Italian, kielbasa, or smoked sausage, sliced
  • 1 medium red bell pepper sliced
  • 1 medium yellow bell pepper sliced
  • 1 medium red onion sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 /2 teaspoon dried oregano
  • salt and pepper to taste
  • fresh parsley chopped, for garnish
  • sour cream for serving (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or lightly grease it for easy cleanup.
  • In a large bowl, combine the frozen pierogies, sliced sausages, bell peppers, and red onion. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, dried oregano, salt, and pepper. Toss everything together until well coated.
  • Spread the mixture evenly on the prepared baking sheet, ensuring that everything is in a single layer to promote even roasting.
  • Bake in the preheated oven for 25-30 minutes. Be sure to flip the pierogies and stir the vegetables halfway through to achieve a nice golden color.
  • Once everything is roasted to perfection, remove the pan from the oven and garnish with freshly chopped parsley. Serve hot with a dollop of sour cream on the side for dipping if desired.

Notes

For added flavor, you can experiment with different types of sausages or pierogies to suit your taste preferences. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
