Ingredients
  

Main Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 large yellow onion, sliced
  • 3 cloves garlic, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon seasoning of choice salt, pepper, or paprika
  • 16 oz. smoked or pre-cooked sausage, sliced like andouille or kielbasa

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Combine sweet potatoes, onion, and garlic on a sheet pan. Drizzle with olive oil and toss to coat.
  • Roast for 10 minutes, then stir and spread out again. Roast for another 10 minutes.
  • Add the sliced sausage to the pan, ensuring some cut sides touch the pan for browning.
  • Roast for an additional 10 minutes until the sausage is browned. Serve hot.

Notes

Feel free to experiment with different seasonings and vegetables. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
