  • 13 oz turkey kielbasa, sliced into 1/4" rounds
  • 2 whole bell peppers, diced
  • 1 whole onion, diced
  • 1 pint cherry tomatoes, halved
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 0.5 tsp onion powder
  • 0.5 tsp kosher salt
  • 0.25 tsp cayenne pepper
  • 1.5 cups raw white rice
  • 3 cups reduced-sodium chicken broth
  • 1 lb raw shrimp, deveined
  • 3 whole scallions, chopped

Instructions
 

  • Spray the bottom of a Dutch oven or large pot with olive oil spray and heat over medium-high.
  • Cook the sliced kielbasa for about 10 minutes until browned. Tip: Stir occasionally to ensure even cooking and browning.
  • Add the diced peppers and onions to the pot with the kielbasa and cook for another 10 minutes until tender. Tip: This step adds a wonderful sweetness to the dish.
  • Use the moisture from the peppers and onions to deglaze the pot, scraping up any browned bits from the bottom.
  • Add paprika, onion powder, oregano, cayenne, and salt. Stir well to combine.
  • Add the halved cherry tomatoes and stir. Tip: The tomatoes will soften and add juiciness to the rice.
  • Mix in the uncooked rice, then pour in the chicken broth. Stir well to combine all ingredients.
  • Bring to a boil, cover, and reduce to a simmer. Cook for 15-20 minutes until rice is tender. Tip: Avoid lifting the lid too often to keep the steam in.
  • Add the raw shrimp, stir, cover, and cook for another 5 minutes until shrimp are cooked through. Tip: Shrimp cook quickly; watch for them to turn pink and opaque.
  • Toss in the chopped scallions and mix well. Tip: Scallions add a fresh crunch to the finished dish.
  • Taste and adjust seasoning if needed. Tip: Feel free to add Cajun seasoning or hot sauce for extra flavor!

Notes

For added flavor, you can use Cajun seasoning or hot sauce. Feel free to customize with your favorite vegetables like okra or celery. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
