  • 2 tablespoons olive oil
  • 1.5 cups mixed bell peppers, sliced
  • 1 cup red onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 1 pound shrimp, thawed, deveined, and shelled
  • 3 tablespoons taco seasoning
  • 0.25 cup heavy cream plus more for thinning if needed
  • 2 ounces cream cheese, softened
  • 1.5 cups shredded pepper jack cheese
  • 0.5 cup white American cheese

Instructions
 

  • Heat a large skillet over medium heat and add the olive oil.
  • Once the oil is hot, add the sliced bell peppers, red onion, and mushrooms. Sauté the vegetables for 5-6 minutes until they are tender.
  • Add the shrimp and taco seasoning to the skillet. Toss everything together to coat the shrimp evenly with the spices. Cook for 2-3 minutes until the shrimp are pink and cooked through. Remove the shrimp and vegetables from the skillet and set aside.
  • Lower the heat to low. In the same skillet, add the cream cheese and heavy cream. Stir until you have a smooth sauce with minimal clumps.
  • Gradually add the shredded pepper jack cheese and white American cheese, about 1/2 cup at a time, stirring continuously until all the cheese is melted and fully incorporated into the sauce.
  • Return the cooked shrimp and vegetables to the skillet, stirring to coat everything in the creamy queso. Serve immediately and enjoy!

Notes

For a spicier kick, consider adding jalapeños or a dash of hot sauce to the mix. Serve with warm tortillas or over rice for a complete meal.
