  • 3 tablespoons butter, softened
  • 3 cloves garlic, minced
  • 0.5 tablespoon soy sauce (or coconut aminos)
  • 2 tablespoons sesame oil, divided
  • 1 pound shrimp, peeled and deveined
  • 0.5 teaspoon ginger
  • 0.25 teaspoon sea salt
  • 0.125 teaspoon black pepper
  • 1 medium yellow onion, diced
  • 1 cup frozen mixed vegetables (peas and carrots recommended)
  • 3 large eggs, whisked
  • 3 cups cooked brown rice (or white rice)
  • 2 tablespoons soy sauce (or coconut aminos)
  • green onions, chopped (optional)

Instructions
 

  • Make the Garlic Butter: In a bowl, mix together the softened butter, minced garlic, and soy sauce until well combined. Set aside.
  • Cook the Shrimp: Heat a skillet over medium heat and add 1 tablespoon of sesame oil along with 1 tablespoon of the garlic butter. Once hot, add the shrimp, ginger, sea salt, and black pepper. Cook the shrimp until they are pink and opaque, about 3-4 minutes. Transfer the cooked shrimp to a separate bowl or plate and set aside. Tip: Avoid overcooking the shrimp; they should be just firm and not rubbery.
  • Sauté the Vegetables: In the same skillet, add the remaining 1 tablespoon of sesame oil and 1 tablespoon of garlic butter. Add the diced onion and cook until soft, about 3-4 minutes. Then, add the frozen mixed vegetables and cook until they are tender, about 2-3 minutes. Tip: Feel free to customize the mixed vegetables based on your preference.
  • Scramble the Eggs: Push the vegetables to one side of the skillet. Pour the whisked eggs into the other side and scramble them until fully cooked. Once done, mix the eggs with the vegetables.
  • Combine Everything: Add the cooked rice and the remaining 1 tablespoon of garlic butter to the skillet. Stir well to combine. Drizzle the soy sauce over the rice, then return the cooked shrimp to the pan. Mix everything together until the rice is evenly coated.
  • Prepare the Yum Yum Sauce (if using): In a separate bowl, mix together the mayo, ketchup, melted butter, rice vinegar, paprika, ginger powder, and garlic powder until smooth.
  • Serve: Serve the shrimp fried rice warm, drizzled with yum yum sauce if desired, and garnish with chopped green onions. Tip: For a spicier kick, add some red pepper flakes to the shrimp while cooking.
