  • 1 lb lean ground beef
  • 0.5 cup yellow onion, chopped
  • 0.5 cup green bell pepper, diced
  • 0.5 tsp garlic powder
  • 1 tsp yellow mustard
  • 0.75 cup ketchup
  • 3 tsp light brown sugar
  • 0.5 cup water
  • 1 pinch ground black pepper
  • 1 pinch sea salt
  • 8.5 oz Jiffy cornbread mix (1 box)
  • 1 large egg
  • 0.33 cup milk

Instructions
 

  • Preheat your oven to 400°F (204°C). Grease an 8x8 casserole dish with non-stick cooking spray and set it aside.
  • In a large skillet over medium heat, cook the ground beef, chopped onion, and diced bell pepper until the beef is browned and the onion is soft. Drain any excess fat to keep the dish from being too greasy.
  • Add garlic powder, yellow mustard, ketchup, light brown sugar, salt, and pepper to the beef mixture. Pour in 1/2 cup of water and mix well to combine all the flavors.
  • Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for 10-15 minutes. This step allows the flavors to meld beautifully.
  • Transfer the cooked sloppy joe mixture to the prepared casserole dish, spreading it evenly across the bottom.
  • In a mixing bowl, combine the cornbread mix, egg, and milk until smooth. Spoon this mixture over the sloppy joe layer, spreading it carefully to cover the entire surface.
  • Bake in the preheated oven for 15-20 minutes, or until the cornbread topping is golden brown. You can use a toothpick to check for doneness; it should come out clean.

Notes

Store leftovers covered in the refrigerator for 3-4 days or freeze for up to 3 months. For a thicker cornbread layer, consider using two packages of cornbread mix, adjusting the cooking time as needed. To make a larger batch in a 13x9 baking dish, double the recipe and adjust the cooking time accordingly. Use the toothpick method to ensure it's cooked through.
