  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 medium red bell pepper, chopped
  • 1 clove garlic, chopped
  • 14.5 ounces petite diced tomatoes
  • 1 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon yellow mustard
  • Salt and ground black pepper, to taste
  • 2 cups frozen whole-kernel corn
  • 16 ounces penne pasta
  • 1.5 cups shredded Colby-Jack cheese

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium-high heat, brown the ground beef until no pink remains.
  • Add the chopped red and green bell peppers, onion, and garlic. Cook and stir for 5-7 minutes until crumbly.
  • Stir in the ketchup, tomatoes, mustard, brown sugar, salt, and pepper. Cover and simmer on low heat for about 10 minutes.
  • Cook the corn and pasta in boiling water in separate pots. Drain them both.
  • Add the drained corn, pasta, and shredded cheese to the skillet with the beef mixture. Stir to combine.
  • Transfer everything to a 9x13-inch baking dish.
  • Bake in the preheated oven for 20 minutes.

Notes

For a twist, try adding some chopped fresh herbs like parsley or basil before baking. No alcoholic drinks allowed, please substitute with a non-alcoholic option.
